Sweet Cinnamon-Amaranth Porridge

Recipe: Sweet Cinnamon-Amaranth Porridge


  • 1 cup whole amaranth
  • 3 cups water
  • ½ to 1 tsp sea salt (to taste)
  • ½ chopped dried apples (or 2 fresh apples chopped)*
  • ½ cup chopped walnuts or pine nuts
  • 2 TBS honey or brown rice syrup
  • 1 TBS cinnamon
  • 1/3 cup almond or rice milk


  1. Heat water to boil
  2. Add amaranth
  3. Reduce heat and simmer, covered, about 30 minutes, stirring occasionally (10 minutes if pre-soaked)
  4. Stir in dried fruit and cinnamon; cook 4 minutes. Should be soft and creamy.
  5. Add nuts, honey, milk, sea salt (to taste) and enjoy!
